Sabine Bonvin comes from a family of winegrowers (Cave Feuille Morte in Flanthey). After completing her A-levels, she took a detour via EPFL and obtained a bachelor’s degree in civil engineering. Following a viticulture and winemaking placement in Lavaux, she enrolled at Changins University of Applied Sciences, graduating in 2021. During her studies, she undertook two work placements at Fattoria Moncucchetto in Lugano and then with Mathilde Roux in Fully.
Sabine Bonvin has been involved in athletics since the age of 11 and competed in the 800m at a very high level in Switzerland between the ages of 22 and 27. At that time, she trained with Michel Herren, a coach and philosopher who follows the ‘phusis’ philosophy; even today, she passes on her experience by coaching the middle-distance running group at CA Sion.
Towards the end of her studies at Changins, she took up gardening and drew inspiration from the principles of permaculture to gain a better understanding of soils and the cycles of life. Combined with her philosophical and athletic journey and her meeting with Samuel Clavien (Cave de la Pierre in Venthône), Sabine Bonvin has developed increasingly significant agroecological projects and trained in syntropy in France (with Hervé Covès and later at the Mawagits farm). To date, together with Samuel Clavien, they have planted a 4,500 m² forest garden in 2023, biodiversity hedgerows and fruit hedgerows using syntropy techniques amongst the vineyards in 2024, and a 1,500 m² plot using syntropic agriculture in 2025.
Since the 2021 vintage, Sabine Bonvin has been producing a few very limited-release natural wine cuvées and now works in her parents’ business and that of Samuel Clavien.
