The words
What is the culinary heritage of the Alps, and what are the iconic products of our region? Why have certain recipes become cultural symbols and foster a sense of belonging to the mountains? How does Alpine cuisine tell the story of the mountain people, and how does a Michelin-starred chef draw on and reinterpret this heritage? The first event will take place in the gardens of the Hôtel Aïda with Michelin-starred chef Franck Reynaud and anthropologist Maria Anna Bertolino. Mountain culinary heritage versus haute cuisine.
Music
Ephraim Salzmann, a musician and sound poet from Upper Valais, invites you to discover the Valaisan hackbrett, which his father, Amadé Salzmann, perfected in the Binn Valley in the 1980s. A struck-string instrument whose name means “chopping board” and belongs to the family of table zithers. The musician, who uniquely blends traditional and modern sounds, enjoys conveying a sense of harmony and joie de vivre.
